1 lb large shrimp, peeled and deveined
8 small corn tortillas
2 limes, juiced
4 cloves garlic, minced
2 tbsp olive oil
Salt and pepper, to taste
Fresh cilantro, chopped
Red onion, finely diced
Jalapeño, thinly sliced
Crumbled queso fresco
Sour cream (optional)
Instructions
In a large bowl, combine shrimp with lime juice, minced garlic, olive oil, salt, and pepper. Mix well and let marinate for 30 minutes in the refrigerator.
Preheat an outdoor grill to medium high heat. Grill the marinated shrimp for about 2 3 minutes per side or until they are cooked through and slightly charred.
While the shrimp is grilling, warm up the corn tortillas on the grill or in a pan for about 15 20 seconds each side.
Assemble your tacos: layer grilled shrimp, crumbled queso fresco, chopped cilantro, diced red onion, and jalapeño slices on top of warmed tortillas. Add a dollop of sour cream if desired.
Serve immediately with lime wedges on the side.
