Ingredients

  • 3/4 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 2 cups groundnut soup base
  • 1 medium onion, diced
  • 1 tablespoon ground cayenne pepper
  • 2 cups roasted groundnuts, crushed
  • 1 cup spinach leaves, chopped

Instructions

    In a large bowl, mix the cornmeal and water to form a dough. Cover and let it rest for an hour at room temperature.

    Bring a pot of water to a boil. Grease your hands with some vegetable oil, then shape the dough into small fufu balls. Drop them gently into the boiling water and cook them for 15 minutes until they float to the surface.

    Meanwhile, heat a pan over medium heat. Add some vegetable oil and sauté onions until they become soft and translucent. Add ground cayenne pepper and crushed roasted groundnuts, stirring occasionally. Cook this mixture for 10 minutes.

    Gradually pour in the groundnut soup base while continuously stirring to avoid lumps. Simmer the sauce for another 5 minutes until it thickens slightly. Stir in chopped spinach leaves.
