Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the ground pork and cook until browned, breaking it up with a wooden spoon. Drain any excess fat and set aside.
  2. In the same skillet, sauté onions and garlic until softened and fragrant. Add mushrooms and red bell pepper, cooking for 3 4 minutes or until tender.
  3. Stir in tomato paste, paprika powder, ground caraway seeds, bay leaf, salt, and pepper. Cook for 1 minute, stirring constantly to prevent burning.
  4. Return the cooked pork to the skillet, then add beef broth. Bring to a boil, reduce heat, and simmer for 20 30 minutes, or until the sauce has thickened. Remove bay leaf and discard.
  5. While the goulash is simmering, cook egg noodles according to package instructions. Once cooked, drain and toss with butter.
  6. To serve, divide the buttered egg noodles among two plates, then top with the mouthwatering pork goulash. Garnish with fresh parsley and enjoy!
