Instructions

  6. Once the risotto is cooked, stir in the Parmesan cheese and season with salt and pepper as needed. Serve hot, garnished with fresh parsley.
  7. Preheat the oven to 400°F (200°C). In a separate pan, toss the assorted vegetables in olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25 30 minutes, until tender and slightly charred.
