  5. Lay out the pita bread on a clean surface, evenly distribute the potato onion mixture over each pita.
  6. Carefully roll up the pita into a tight cylinder, making sure to secure with toothpicks if needed.
  7. Slice the rolled pita into 1 inch thick pieces and serve immediately.
