Ingredients

  • 3 cups all
  • purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 1/2 cups warm water (around 110°F / 45°C)
  • 2 1/2 teaspoons active dry yeast
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, cubed

Instructions

  1. In a large mixing bowl, combine the all purpose flour, 1/4 cup granulated sugar, 2 teaspoons ground cinnamon, 1 teaspoon ground cardamom, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon salt.
  2. In a separate small bowl, combine the warm water and yeast, then mix until dissolved. Let it sit for about 5 minutes until it becomes frothy.
  3. Gradually pour the melted butter into the dry ingredients, mixing well.
  4. Slowly add the yeasty water to the dough mixture and continue to mix until a smooth ball forms. Knead the dough for about 10 minutes, or until it becomes elastic.
  5. Cover the dough with a clean kitchen towel and let it rise in a warm place for 1 hour or until it doubles in size.
  6. While the dough is rising, prepare the almond crumble by combining the almond flour, 1/4 cup granulated sugar, 1/2 teaspoon ground cinnamon, and cubed butter in a bowl. Use your fingers to rub the butter into the dry ingredients until it forms coarse crumbs. Set aside.
  7. After the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a long, thin rope and then twist them together into a spiral shape.
  8. Preheat your oven to 350°F (175°C) and grease a baking sheet or use parchment paper. Arrange the chimney cakes on the prepared baking sheet, leaving some space between each one for even cooking.
  9. Bake in the preheated oven for 20 minutes, or until golden brown. Remove from the oven and immediately sprinkle with the almond crumble, pressing it gently onto the warm surface of the chimney cakes.
  10. Allow the chimney cakes to cool slightly before cutting them into slices or serving whole, depending on your preference. Enjoy!
