Ingredients

  • 2 cups potato, peeled and grated
  • 1/2 cup chickpea flour (besan)
  • 1/4 cup cilantro, finely chopped
  • 1/4 cup green chili, finely chopped
  • 1 tablespoon ginger, minced
  • 1 teaspoon cumin seeds, toasted and ground
  • 1 teaspoon coriander seeds, toasted and ground
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric
  • Salt, to taste
  • Oil, for frying
  • 2 cups yogurt, beaten
  • 1 cup tamarind chutney
  • 1 cup mint chutney
  • 1 cup pomegranate seeds
  • 1/4 cup sev (fried gram flour sticks)
  • 1/4 cup roasted cashews, roughly chopped

Instructions

  1. In a large bowl, combine the grated potatoes, chickpea flour, cilantro, green chili, ginger, ground cumin and coriander seeds, red chili powder, turmeric, and salt. Mix until well combined.
  2. Shape the potato mixture into 8 10 round patties (aloo tikkis).
  3. Heat oil in a pan over medium heat. Carefully lower each aloo tikki into the hot oil and fry until golden brown, approximately 4 minutes per side. Remove from oil and set aside to drain on paper towels.
  4. Arrange aloo tikkis on a serving platter. Drizzle with yogurt, tamarind chutney, and mint chutney. Garnish with pomegranate seeds, sev, and chopped cashews. Serve immediately.
