  • 1 1/2 cups fresh mixed berries (strawberries, blueberries, raspberries, and blackberries) 1/4 cup granulated sugar 1/2 cup heavy whipping cream 1 teaspoon pure vanilla extract 1/4 cup powdered sugar 3 tablespoons mascarpone cheese

Instructions

  1. In a small saucepan, combine the mixed berries and granulated sugar. Cook over medium heat until the berries release their juices and soften slightly, about 5 minutes. Remove from heat and let cool.
  2. In a large bowl, whisk together the heavy whipping cream, vanilla extract, and powdered sugar until soft peaks form. Gently fold in the mascarpone cheese.
  3. Spoon a layer of the berry mixture into four dessert glasses or parfait glasses, followed by a generous dollop of the whipped cream and mascarpone mixture. Repeat for another layer each, ending with the whipped cream on top.
  4. Garnish with fresh mint leaves and additional mixed berries, if desired.
