Ingredients

  • 1 cup quinoa, uncooked 2 cups water 1 large avocado, ripe 1 small cucumber, sliced 1 small red bell pepper, diced 1 small yellow bell pepper, diced 4 cherry tomatoes, halved 1/2 cup fresh spinach, chopped 1/2 cup mixed berries (strawberries, blueberries, raspberries) 1/2 cup mixed nuts and seeds (almonds, pumpkin seeds, sunflower seeds) 1 orange, peeled and segmented Salt and pepper, to taste Fresh dill, for garnish Drizzle of extra virgin olive oil, for serving (optional)

Instructions

  1. In a medium saucepan, bring the water to a boil. Add the quinoa and cook according to package instructions until tender and fluffy. Set aside to cool.
  2. Prepare all of your vegetables and fruits as listed in the ingredients.
  3. In a large bowl, combine the cooked and cooled quinoa with cucumber, bell peppers, cherry tomatoes, spinach, mixed berries, nuts, seeds, and orange segments. Season with salt and pepper to taste.
  4. Garnish with fresh dill and a drizzle of extra virgin olive oil, if desired. Serve immediately.
