  • 1 cup green lentils, rinsed and drained 2 cups water 1 tablespoon olive oil 1 onion, chopped 3 cloves garlic, minced 1 teaspoon ground coriander 1 teaspoon ground cumin 1 teaspoon turmeric 1 cup walnuts, coarsely chopped 1 cup dried apricots, chopped Salt and pepper, to taste Fresh parsley, finely chopped, for garnish
