Ingredients

• 1 cup granulated sugar
• 3/4 cup water
• 2 tbsp lemon juice
• 2 tbsp cornstarch
• 1 1/2 cups powdered sugar
• 1/4 cup chopped pistachios, toasted
• 1/4 cup finely chopped walnuts
• 1 tsp rosewater extract
• 1/4 tsp orange blossom water
• Food coloring (red, green, and yellow)
• Parchment paper

Instructions

1. In a medium saucepan, combine sugar, water, and lemon juice. Cook over medium heat until sugar dissolves.
2. In a small bowl, mix cornstarch with 2 tbsp cold water, then stir into the saucepan. Bring to a boil, and cook for 4 5 minutes until slightly thickened.
3. Remove from heat and let cool for 10 minutes. Stir in powdered sugar, nuts, and flavorings. Divide the mixture into three equal parts.
4. Add food coloring to each part (red, green, and yellow) and mix well.
5. Line a baking sheet with parchment paper. Shape each colored mixture into small bite sized balls using your hands or a melon baller. Arrange them on the prepared sheet.
6. Let the Turkish delight bites sit at room temperature for 4 hours, or until firm and slightly sticky.
7. Store in an airtight container at room temperature to maintain texture.
