Sumptuous Vegan Nigerian Breakfast Feast: Plant-Based Jollof Rice and Suya Tofu Bowl

Slice the avocado. Cooking:
In a large saucepan, heat the vegetable oil over medium heat. Add the onion and sauté until translucent, about 3 minutes.
Stir in the garlic, ground ginger, ground cumin, paprika, nutmeg, and allspice. Cook for 1 minute to release the aroma of the spices.
Add the tomato puree, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
Stir in the rice, salt, and black pepper. Cover and cook according to package instructions until the rice is tender and has absorbed all the liquid, about 18 20 minutes.
In a large nonstick skillet or grill pan, heat the vegetable oil over medium high heat. Add the diced tofu and cook until golden brown on all sides, about 6 7 minutes.
In a small bowl, mix together the soy sauce and Suya spice mix. Brush onto the cooked tofu and cook for an additional 2 3 minutes, until the tofu is crispy and infused with the spice mixture. Assemble:
Spoon the cooked rice into a large serving bowl, creating a bed for the Suya Tofu.
Arrange the Suya Tofu on top of the rice.
Garnish with fresh cilantro and avocado slices.
