  • 1 cup almond flour 2 tbsp coconut flour 3 large eggs, separated 3/4 cup granulated sugar 1/4 tsp salt 1/4 cup unsalted butter, melted 1/2 tsp ground cinnamon 1/4 tsp ground cardamom 1/4 tsp ground nutmeg 1 tbsp orange zest 1/2 tsp pure vanilla extract 2 cups mixed fresh fruits (apricots, figs, cherries, and grapes) 1 cup Turkish delight

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9 inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, cinnamon, cardamom, nutmeg, and salt. Set aside.
  3. In another bowl, cream together sugar and egg yolks until pale and fluffy. Stir in melted butter, orange zest, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. In a separate clean bowl, beat egg whites until stiff peaks form. Fold them gently into the batter.
  6. Pour the batter into the prepared cake pan and smooth the top. Arrange the mixed fruits on top of the batter.
  7. Bake for 25 30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool.
  8. Cut the cake into wedges and serve with Turkish delight pieces.
