Ingredients
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup mixed greens (spinach, arugula, kale)
- 1/4 cup sliced almonds
- 1/4 cup chopped avocado
- 1/4 cup diced cucumber
- 1/4 cup cherry tomatoes, halved
- 2 tbsp sunflower seeds
- 1/2 cup cooked wild rice or quinoa
- 2 tbsp mixed nuts (walnuts, pecans)
- 1/4 cup diced mango
- 1/4 cup shredded coconut
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine mixed berries, mixed greens, sliced almonds, avocado, cucumber, cherry tomatoes, sunflower seeds, wild rice or quinoa, mixed nuts, mango, shredded coconut, olive oil, lemon juice, salt, and pepper.
- Gently toss the ingredients together until evenly combined.
