  1. In a small bowl, combine gochujang, soy sauce, honey or agave syrup, garlic, and ginger. Mix well.
  2. Heat 1 tbsp of olive oil in a pan over medium heat. Add tempeh and cook until browned on all sides.
  3. Season cooked tempeh with salt and pepper to taste. Remove from the pan and set aside.
  4. In the same pan, add another tbsp of olive oil and sauté shiitake mushrooms for 2 3 minutes.
  5. Add julienned carrots and thinly sliced cucumber, stirring frequently for 1 2 minutes.
  6. Add spinach and edamame to the pan, cooking until spinach is wilted.
  7. Add the gochujang mixture to the pan and cook for another 1 2 minutes, allowing flavors to meld.
  8. In a bowl, combine cooked quinoa with the tempeh and vegetable mixture. Sprinkle sesame seeds on top.
