Nuts (Almond Butter)
Ingredients
- 1 cup cauliflower rice
- 1 cup shredded chicken breast
- 1/2 cup chopped bell peppers (red, yellow, and green)
- 1/2 cup sliced mushrooms
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup unsweetened coconut flakes, toasted
- 1 avocado, sliced
- 2 tbsp almond butter
- 2 tbsp lime juice
- Salt and pepper, to taste
Instructions
- In a medium saucepan, cook the cauliflower rice according to package instructions. Set aside.
- In a separate pan, sauté the shredded chicken breast with bell peppers and mushrooms until cooked through. Season with salt and pepper to taste.
- Combine almond butter and lime juice in a small bowl, stirring until smooth. This will be our healthy fat dressing.
- To assemble, divide the cauliflower rice between two bowls, then top each with sautéed chicken and vegetables. Finish with fresh cilantro leaves, toasted coconut flakes, and avocado slices. Drizzle the almond butter dressing over the top for a burst of flavor and healthy fats.
