Ingredients

  • 2 slices of sprouted grain bread
  • 1 ripe avocado
  • 2 cups arugula
  • 1 cup cherry tomatoes
  • 1/2 lemon, zested and juiced
  • 1/4 cup pine nuts
  • 1/4 cup crumbled feta cheese (optional)
  • Olive oil
  • Salt and pepper, to taste

Instructions

  1. a. Toast the sprouted grain bread slices. b. Slice the avocado in half and remove the pit. Scoop out the flesh into a bowl. c. Mash the avocado with lemon zest, juice, salt, and pepper until smooth. d. Spread the mashed avocado onto each slice of toast. e. Layer arugula on top of the avocado spread. f. Slice the cherry tomatoes in half and arrange them over the arugula. g. Sprinkle lemon zest, pine nuts, and crumbled feta cheese (if using) over the top. h. Drizzle with olive oil to taste.
