Ingredients
- 1. 2 lbs boneless, skinless chicken breasts 2. 1 cup crackers (Ritz or Saltines) 3. 1/4 cup all
- purpose flour 4. 2 large eggs 5. 1 cup buttermilk 6. 2 cups vegetable oil 7. 8 slider buns 8. Toppings: lettuce, tomato, pickles, and your favorite sauce
Instructions
- Cut the chicken into bite sized pieces and set aside.
- In a shallow dish, crush crackers until they resemble coarse crumbs.
- In another shallow dish, whisk together flour and eggs to create a batter.
- Pour buttermilk into a third shallow dish.
- Heat vegetable oil in a deep frying pan or skillet to 375°F (190°C).
- Dip each piece of chicken into the batter, then the buttermilk, and finally the crushed crackers, ensuring each piece is evenly coated.
- Carefully place the coated chicken pieces in the hot oil, being careful not to overcrowd the pan. Fry until golden brown and cooked through, about 4 5 minutes. Remove from the oil and let drain on paper towels.
- Assemble sliders with your choice of toppings and serve immediately.
