  • 1. 4 ears fresh corn, husked 2. 3 tablespoons unsalted butter, melted 3. 1/2 cup crumbled cotija cheese 4. 1/2 teaspoon chili powder 5. 1/2 teaspoon ground paprika 6. Salt and pepper, to taste 7. 2 cans (15 ounces each) black beans, drained and rinsed 8. 1 cup barbecue sauce 9. 1 tablespoon brown sugar 10. 1/4 teaspoon smoked paprika 11. 1/4 teaspoon garlic powder 12. 1/4 teaspoon onion powder 13. 1/4 teaspoon cumin

Instructions

  1. Preheat your grill to medium high heat (about 400°F).
  2. In a small bowl, combine the chili powder, ground paprika, salt, and pepper set aside.
  3. Brush each ear of corn with melted butter and sprinkle with half of the seasoning mixture.
  4. Grill the corn for 8 10 minutes, turning every few minutes until charred and tender.
  5. In a large saucepan, combine black beans, barbecue sauce, brown sugar, smoked paprika, garlic powder, onion powder, cumin, and remaining seasoning mixture. Cook over medium heat until heated through, stirring occasionally.
  6. Remove corn from grill and immediately brush with the remaining melted butter and sprinkle with crumbled cotija cheese.
