Instructions

  1. In a medium bowl, combine the smoky BBQ sauce, hot sauce, Worcestershire sauce, apple cider vinegar, smoked paprika, chili powder, ground black pepper, and salt to create the Firecracker Sauce. Set aside.
  2. Preheat your grill or grill pan to medium high heat. Grill the sausages until fully cooked, about 5 7 minutes per side, turning occasionally. Remove from heat and let rest.
  3. In a large skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, for about 10 12 minutes or until they are caramelized and softened. Stir in 2 tablespoons of Firecracker Sauce and continue to cook until the onions are well coated.
  4. Place the hollowed buns on the grill or grill pan, cut side down, and toast them for about 2 minutes or until lightly golden. Remove from heat.
  5. Spread a generous layer of Firecracker Sauce inside each toasted bun. Add your favorite cheese (optional) and place the cooked sausages on top. Fill with caramelized onions, and garnish with fresh parsley or cilantro.
