Instructions

  2. In a small bowl, combine the chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
  3. Brush each ear of corn with melted butter and then sprinkle the spice mixture evenly over each ear.
  4. Place the corn on the preheated grill and cook for 8 10 minutes, turning occasionally, until the corn is tender and lightly charred.
  5. Remove the corn from the grill and immediately brush with additional melted butter, then sprinkle with cotija cheese, cilantro, and lime juice. If desired, add sliced jalapeño on top.
  6. Serve immediately and enjoy!
