Ingredients

  • 2 lbs ground beef (80/20)
  • 1 packet taco seasoning
  • 4 large hamburger buns
  • 8 slices of sharp cheddar cheese
  • 1 cup shredded nacho cheese
  • 1/4 cup chipotle mayo
  • 2 cups iceberg lettuce, chopped
  • 2 large tomatoes, thinly sliced
  • 1 small red onion, finely chopped
  • 1/4 cup pickles, sliced
  • 2 tbsp unsalted butter

Instructions

  1. Preheat grill to medium high heat.
  2. In a large bowl, combine ground beef and taco seasoning. Form into 4 equal patties.
  3. Grill burgers for 5 7 minutes per side or until desired doneness is reached. Add 2 slices of cheddar cheese on each burger during the last minute of grilling to melt.
  4. While burgers are grilling, cut hamburger buns in half and spread chipotle mayo on both the top and bottom halves. Place on the grill with the cut side down for 30 seconds or until lightly toasted. Set aside.
  5. To assemble, place each patty on the bottom half of a toasted bun. Add shredded lettuce, tomato slices, red onion, and pickles. Top with nacho cheese, then add the top half of the toasted bun. Repeat for all 4 burgers.
