  • 4 ears of fresh corn, husks removed and cleaned

  • 1/4 teaspoon cayenne pepper (optional)

  • 1 lime, cut into wedges

Instructions

  1. Heat your grill to medium high heat (around 350°F). In a small bowl, mix together the mayonnaise, BBQ sauce, smoked paprika, chili powder, garlic powder, and cayenne pepper (if using) until smooth. Set aside. Brush each ear of corn with olive oil and season with salt and black pepper to taste. Grill the corn for about 8 10 minutes, turning occasionally, until tender and slightly charred on all sides. Remove the corn from the grill and immediately brush with the prepared smoky BBQ sauce mixture. Sprinkle the grilled corn generously with shredded Cotija or Parmesan cheese and top with chopped cilantro. Squeeze lime juice over each ear of corn, to taste.
