  • 2 lbs beef sirloin or chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced

  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 8 fajita
  • sized flour tortillas
  • 2 cups shredded cheese (Monterey Jack or cheddar)
  • 1 cup sour cream
  • 2 cups prepared guacamole
  • 1 cup fresh salsa

Instructions

  1. In a large bowl, combine sliced beef or chicken, bell peppers, and onion. Season with chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper to taste. Mix well.
  2. Preheat a large cast iron skillet or griddle over medium high heat.
  3. Cook the seasoned meat and vegetables for 5 7 minutes until tender and slightly charred. Remove from heat and keep warm.
  4. Warm flour tortillas in the microwave or on the skillet for 10 20 seconds.
  5. To assemble, place a portion of cooked meat and vegetables onto each tortilla, top with cheese, sour cream, guacamole, and salsa. Roll up and serve immediately.
