  • 1 large onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 3 tablespoons fajita seasoning mix
  • 8 fajita tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 avocado, diced
  • 1 lime, cut into wedges
  • Fresh cilantro, chopped
  • Sour cream

Instructions

  1. In a large bowl, combine the thinly sliced beef sirloin, onion, and bell peppers. Sprinkle with fajita seasoning mix and toss to coat evenly.
  2. Preheat your grill or a grill pan to medium high heat. Cook the meat and vegetables for 4 5 minutes per side, or until tender and slightly charred. Remove from heat and set aside.
  3. Warm the fajita tortillas on the grill for about 10 seconds per side. Assemble each fajita with the cooked meat and vegetables, cheese, avocado, lime wedges, cilantro, and a dollop of sour cream.
  4. Fold the tortillas into triangles and serve immediately.
