Instructions

  1. Preheat grill to medium high heat (350°F). Brush grill grates with olive oil.
  2. In a large skillet over medium heat, cook chorizo until browned, breaking it apart with a wooden spoon. Drain excess fat and set aside to cool slightly.
  3. In a bowl, combine cooked chorizo, cheddar cheese, cotija cheese, green onions, garlic, cumin, salt, and pepper. Mix well.
  4. Stuff each jalapeño half with the chorizo mixture, pressing firmly to pack it in. Place stuffed jalapeños on the grill, cut side up.
