Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 2 bell peppers, thinly sliced (green and red)
  • 8 flour tortillas
  • 2 tbsp oil For Marinade:
  • 1/4 cup lime juice
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper

Instructions

  1. Combine all marinade ingredients in a bowl and whisk until well combined.
  2. In a large resealable plastic bag, add sliced beef and pour in the marinade. Seal the bag and marinate for at least 30 minutes or up to 4 hours.
  3. While the beef is marinating, prepare the onion and bell peppers. Heat oil in a large skillet over medium high heat. Add onions and peppers cook until tender and slightly charred, about 5 minutes. Remove from pan and set aside.
  4. In the same skillet, add the marinated beef, discarding any excess marinade. Cook for about 3 4 minutes per side or until desired doneness. Transfer to a plate and tent with foil to keep warm.
  5. Assemble fajitas: Warm tortillas on a griddle or in a dry skillet for 10 seconds per side. Layer beef, onions, and peppers onto each tortilla. Top with your favorite fixings such as cheese, salsa, guacamole, or sour cream.
