Ingredients

  • 8 oz tortilla chips
  • 1 lb thinly sliced steak
  • 1 bell pepper (any color)
  • 1 red onion
  • 2 cloves garlic
  • 8 oz shredded cheese (Monterey Jack, Cheddar, or your choice)
  • 1 packet fajita seasoning
  • 4 tbsp olive oil

Instructions

  1. Preheat a grill or grill pan over medium high heat. In a small bowl, mix the steak with the fajita seasoning and half of the minced garlic.
  2. Slice the bell pepper and red onion into thin strips. Set aside.
  3. Brush the sliced garlic onto the grill grates or pan. Cook the seasoned steak until browned, about 4 5 minutes per side. Remove from heat and let rest.
  4. Grill the vegetables for 2 3 minutes per side, until slightly charred. Set aside.
  5. Arrange tortilla chips on a large platter or tray, leaving spaces between them.
  6. Slice the steak into thin strips and layer it over the chips. Top with grilled vegetables, cheese, and remaining minced garlic.
  7. Grill the assembled dish for 3 4 minutes until the cheese is melted and bubbly. Remove from heat and serve immediately.
