  • 1 cup chia seeds 2 cups coconut milk 4 tablespoons maple syrup 1 teaspoon vanilla extract 2 stalks lemongrass, bruised 3 kaffir lime leaves 1 ripe mango, sliced Zest and juice of 1 lime

Instructions

  1. In a medium bowl, combine chia seeds, coconut milk, maple syrup, and vanilla extract. Stir until well combined. Add bruised lemongrass and kaffir lime leaves to the mixture and cover with cling wrap. Refrigerate for 4 hours or overnight.
  2. Once set, remove chia pudding from refrigerator and discard lemongrass and kaffir lime leaves. Divide pudding into four serving glasses.
  3. Arrange sliced mango on top of each glass, followed by a sprinkle of lime zest. Finish with a drizzle of lime juice.
