Fish (Fish Sauce) - Nuts (Peanut Butter) - Shellfish (Shrimp)
Ingredients
16 large shrimp, peeled and deveined
1/2 cup coconut cream
2 tbsp almond flour
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp chopped fresh cilantro
1 tsp grated ginger
1/4 tsp ground turmeric
1/4 tsp ground cayenne pepper (adjust to taste)
8 wooden skewers Spicy Peanut Sauce:
1/2 cup natural peanut butter
1/4 cup coconut milk
1 tbsp lime juice
1 tbsp fish sauce
1 tsp sriracha (adjust to taste)
1/4 tsp ground cayenne pepper (optional)
Instructions
In a medium bowl, mix the coconut cream, almond flour, fish sauce, lime juice, cilantro, ginger, turmeric, and cayenne pepper. Add the shrimp to the marinade and let it sit for 30 minutes in the refrigerator.
Meanwhile, prepare the spicy peanut sauce by whisking together the peanut butter, coconut milk, lime juice, fish sauce, sriracha, and cayenne pepper (if using) until smooth and creamy. Set aside.
Preheat your grill or grill pan to medium high heat. Thread the marinated shrimp onto the wooden skewers and discard any remaining marinade. Grill the skewers for 2 3 minutes per side, until the shrimp are cooked through and slightly charred.
Serve the grilled shrimp satay with a generous dollop of spicy peanut sauce on the side. Garnish with additional cilantro leaves if desired. Enjoy your sensational Thai Snack!
Chef’s Insight
To add more depth to the dish, you can marinate the shrimp for longer than 30 minutes or even overnight. The longer marination time allows the flavors to penetrate deeper into the shrimp for a richer taste.
Notes
For an extra touch of flair, serve the shrimp satay with fresh vegetables like cucumber, bell peppers, or cherry tomatoes for dipping.
