Instructions

  1. In a medium bowl, whisk together the coffee, mascarpone cheese, and sugar until smooth and well combined. Set aside.
  2. In a separate large bowl, beat the egg yolks with an electric mixer until thick and pale. Slowly add in the vanilla extract, followed by the coffee mixture, until fully incorporated.
  3. In another large bowl, using clean beaters, whip the heavy cream to stiff peaks. Fold the whipped cream into the coffee egg yolk mixture gently but thoroughly.
  4. Dip each ladyfinger into the remaining coffee and layer them in the bottom of 6 martini glasses.
  5. Top with a generous spoonful of the mascarpone filling, followed by another dipped ladyfinger, and finish with a final spoonful of the mascarpone mixture.
  6. Dust each glass generously with cocoa powder, using a fine mesh sieve for precision.
