Ingredients

  • 1 lb ground beef (80% lean) 4 large buns, split and toasted 4 slices Monterey Jack cheese 2 jalapeños, seeds removed and finely chopped 2 serrano peppers, seeds removed and finely chopped 2 chipotle peppers in adobo sauce, finely chopped 1 cup barbecue sauce (homemade or store
  • bought) 4 slices crispy bacon 4 leaf lettuce leaves 4 thin tomato slices 4 pickle slices Salt and pepper, to taste Olive oil, for brushing

Instructions

  1. In a large bowl, combine ground beef, jalapeños, serrano peppers, chipotle peppers, salt, and pepper. Mix gently until well combined but avoid over mixing. Form into 4 equal patties.
  2. Preheat your grill or stovetop griddle to medium high heat. Brush the grates with olive oil to prevent sticking.
  3. Place the burgers on the grill and cook for 5 minutes per side, or until they reach your desired level of doneness. During the last minute of cooking, add a slice of cheese to each patty to melt.
  4. Meanwhile, in a small bowl, mix barbecue sauce with chipotle peppers and adobo sauce to taste. Grill buns cut side down until lightly toasted.
  5. Assemble the burgers by placing each patty on the bottom half of a bun, followed by crispy bacon, lettuce, tomato slices, pickles, and a generous layer of the spicy barbecue sauce. Top with the remaining half of the bun and serve immediately.
