Ingredients
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 3 tablespoons water
- 2 teaspoons unflavored gelatin powder
- 1/2 cup white rum
- 1/4 cup fresh lime juice
- 2 tablespoons fresh mint leaves, chopped
- 1 tablespoon lime zest
Instructions
- In a saucepan, combine heavy cream, sugar, salt, and water. Heat over medium heat until the sugar dissolves, stirring occasionally. Remove from heat and let cool for 5 minutes.
- Sprinkle gelatin evenly over the cooled cream mixture. Let sit for 5 minutes to soften.
- In a separate bowl, combine white rum, lime juice, mint leaves, and lime zest. Mix well and let it infuse for 10 minutes.
- Slowly pour the infused liquid into the cooled cream mixture, stirring gently.
- Pour the mixture through a fine mesh sieve into a large measuring cup or bowl to remove mint leaves.
- Divide the mixture among six 4 ounce ramekins or dessert cups. Cover each with plastic wrap and refrigerate for at least 4 hours, or until set.
