  • 2 tablespoons fresh mint leaves, chopped
  • 1 tablespoon lime zest

Instructions

  1. In a saucepan, combine heavy cream, sugar, salt, and water. Heat over medium heat until the sugar dissolves, stirring occasionally. Remove from heat and let cool for 5 minutes.
  2. Sprinkle gelatin evenly over the cooled cream mixture. Let sit for 5 minutes to soften.
  3. In a separate bowl, combine white rum, lime juice, mint leaves, and lime zest. Mix well and let it infuse for 10 minutes.
  4. Slowly pour the infused liquid into the cooled cream mixture, stirring gently.
  5. Pour the mixture through a fine mesh sieve into a large measuring cup or bowl to remove mint leaves.
  6. Divide the mixture among six 4 ounce ramekins or dessert cups. Cover each with plastic wrap and refrigerate for at least 4 hours, or until set.
