  • 1/2 cup heavy cream
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons spiced rum

  • A pinch of salt

Instructions

  1. In a small saucepan, combine the coconut milk, heavy cream, and a pinch of salt. Bring to a gentle simmer over medium heat, then remove from heat.
  2. In a separate bowl, whisk together the egg yolks and sugar until pale and creamy. Slowly pour in the warm coconut mixture, stirring constantly.
