Ingredients

  • 1 cup mixed tropical fruits (pineapple, mango, kiwi, banana)
  • 1/2 cup coconut milk
  • 1/4 cup coconut cream
  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

Instructions

  1. In a blender, combine the tropical fruits and blend until smooth.
  2. In a mixing bowl, whisk together the coconut milk, coconut cream, vanilla extract, honey or maple syrup, and cinnamon until well combined and creamy.
  3. To assemble the parfaits, layer the fruit puree and coconut whipped cream alternately in two serving glasses. Repeat the layers twice.
  4. Chill the parfaits in the refrigerator for at least 1 hour before serving.
