Ingredients
- 1 cup mixed tropical fruits (pineapple, mango, kiwi, banana)
- 1/2 cup coconut milk
- 1/4 cup coconut cream
- 1 tsp vanilla extract
- 1 tbsp honey or maple syrup
- 1/2 tsp cinnamon
Instructions
- In a blender, combine the tropical fruits and blend until smooth.
- In a mixing bowl, whisk together the coconut milk, coconut cream, vanilla extract, honey or maple syrup, and cinnamon until well combined and creamy.
- To assemble the parfaits, layer the fruit puree and coconut whipped cream alternately in two serving glasses. Repeat the layers twice.
- Chill the parfaits in the refrigerator for at least 1 hour before serving.
Chef’s Insight
Allow the coconut whipped cream to firm up in the refrigerator before assembling the parfaits for better texture.
Notes
Adjust the sweetness to taste by adding more honey or maple syrup if desired.
