1 cup cooked quinoa (preferably sprouted) 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries) 1/2 cup diced pineapple 1/4 cup chopped kale 1/4 cup chopped cucumber 1/2 medium avocado, sliced 1/4 cup toasted coconut flakes 1 tbsp chia seeds 1 tbsp hemp seeds 1 tbsp honey or maple syrup (optional)
Instructions
In a large mixing bowl, combine the cooked quinoa with the chia and hemp seeds. Let it sit for about 5 minutes to allow the seeds to soften.
Add the mixed berries, diced pineapple, chopped kale, and cucumber to the bowl.
Gently mix all ingredients until well combined.
Divide the mixture between two bowls or plates.
Top each bowl with avocado slices and a sprinkle of toasted coconut flakes.
Drizzle honey or maple syrup over the top, if desired.
