Ingredients
- 1 cup cooked quinoa (or cauliflower rice for a lower carb option)
- 1/2 cup chopped pineapple
- 1/2 cup chopped mango
- 1/2 cup blueberries
- 1/4 cup chopped almonds
- 1 scoop vanilla whey protein powder (optional)
- 1 tbsp chia seeds
- 1 tbsp hemp seeds
- 1 cup coconut milk
- A pinch of sea salt
Instructions
- In a large bowl, combine cooked quinoa or cauliflower rice with chopped pineapple, mango, and blueberries. Mix gently to evenly distribute the fruits.
- Sprinkle chia seeds and hemp seeds over the fruit mixture. If using protein powder, add it at this stage.
- Pour coconut milk over the top and gently mix to combine. Season with a pinch of sea salt to taste.
- Divide the mixture between two serving bowls. Sprinkle almonds on top for added crunch.
