  • 6 oz fresh mahi
  • mahi fillet 1 cup spinach, chopped 1/2 cup cherry tomatoes, halved 1/2 cup pineapple, diced 1/4 cup red onion, thinly sliced 1/4 cup almonds, roughly chopped 1/4 cup coconut oil 1 avocado, sliced Salt and pepper, to taste Lemon or lime juice, to taste Fresh cilantro, for garnish Paleo mayo (optional) Coconut flour tortillas (optional)

Instructions

  1. Season the mahi mahi fillet with salt and pepper, to taste.
  2. Heat 2 tablespoons of coconut oil in a pan over medium heat. Add the fillet and cook for about 5 minutes on each side or until fully cooked. Set aside and let it rest.
  3. In a large bowl, combine spinach, cherry tomatoes, pineapple, red onion, and almonds. Drizzle with lemon or lime juice, to taste, and mix well.
  4. Slice the mahi mahi fillet into strips and add it to the salad. Garnish with fresh cilantro leaves.
  5. If desired, serve on coconut flour tortillas and top with avocado slices and a dollop of paleo mayo.
