  • 1 cup unsweetened shredded coconut, divided 1/2 cup macadamia nuts 1/2 cup fresh pineapple, finely diced 1/4 cup chia seeds 1/4 teaspoon sea salt 1 tablespoon pure maple syrup (optional) Zest and juice of one lime

Instructions

  1. In a food processor, pulse macadamia nuts until they are finely chopped. Be careful not to overprocess.
  2. In a medium mixing bowl, combine the processed macadamia nuts, 3/4 cup shredded coconut, chia seeds, sea salt, lime zest, and lime juice. Stir well to combine. If desired, add in the maple syrup for extra sweetness.
  3. Fold in the diced pineapple until evenly distributed throughout the mixture.
  4. Using a spoon or cookie scoop, portion out the mixture into 12 equal sized balls. Roll each ball between your hands to form a smooth sphere.
  5. Roll each bite in the remaining 1/4 cup of shredded coconut to coat evenly.
  6. Place energy bites on a parchment lined tray and refrigerate for at least 30 minutes or until firm.
  7. Serve chilled and enjoy!
