Ingredients
- 1 cup coconut milk
- 2 cups diced fresh pineapple
- 3 tablespoons white rum
- 4 scoops rum
- infused ice cream
- 6 maraschino cherries
- 6 pineapple wedges
- 6 mint leaves
- 1/2 cup toasted coconut flakes
Instructions
- a. In a blender, combine the coconut milk and diced fresh pineapple. Blend until smooth. b. Pour the pineapple mixture into 6 tall glasses, filling each glass halfway. c. Top each glass with two scoops of rum infused ice cream. d. Insert a maraschino cherry in the center of each glass and place a pineapple wedge on top. e. Garnish with a mint leaf and a sprinkle of toasted coconut flakes.
