  • purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 3/4 cup (180ml) milk 2 cups (300g) desiccated coconut 2 cups (400g) powdered sugar 6 tablespoons (30g) unsweetened cocoa powder 1 teaspoon vanilla extract 1/2 cup (125ml) boiling water

Instructions

  1. a. Preheat the oven to 350°F (175°C). Grease and line an 8 inch (20cm) square cake pan. b. In a large bowl, whisk together eggs, sugar, and vegetable oil until well combined. c. In another bowl, sift together flour, baking powder, and salt. d. Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with the dry mixture. Mix until just combined. e. Pour the batter into the prepared cake pan and bake for 30 35 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely on a wire rack. f. In a shallow dish, combine desiccated coconut and powdered sugar. In another dish, whisk together cocoa powder, boiling water, and vanilla extract until smooth. Set aside. g. Cut the cooled cake into 16 even sized squares. Dip each square into the chocolate mixture, then roll in the coconut sugar mixture to coat completely. h. Place the coated lamingtons on a wire rack and let them set for at least 30 minutes before serving. Enjoy your Australian Lamington Delight!
