  • 1 tbsp granulated sugar
  • 1/2 tsp salt

  • 1 cup mixed berries (strawberries, blueberries, and raspberries)
  • 1/4 cup water
  • 2 tbsp granulated sugar (for the compote)
  • 1 tsp lemon zest

  • Maple syrup, for serving (optional)

Instructions

  1. In a large bowl, whisk together flour, baking powder, 1 tbsp sugar, and salt.
  2. In a separate bowl, mix milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix!
  4. Heat a non stick skillet or griddle over medium heat. Lightly oil the surface.
  5. Pour 1/4 cup of batter for each pancake onto the heated skillet or griddle. Cook until bubbles appear on the surface and edges are set, about 2 3 minutes. Flip and cook for another 2 minutes or until golden brown. Repeat with remaining batter.
  6. For the mixed berry compote, combine mixed berries, water, 2 tbsp sugar, and lemon zest in a saucepan over medium heat. Cook until the berries soften and release their juices, about 5 7 minutes. Stir occasionally to prevent sticking.
