Instructions

  1. Soak wood chips in water for at least 30 minutes before grilling.
  2. In a small bowl, mix together chili powder, paprika, garlic powder, onion powder, cumin, ground black pepper, salt, and brown sugar. Rub the spice mixture onto the brisket.
  3. Preheat your grill to medium high heat (around 350°F) and add the soaked wood chips. Place the brisket directly on the grill grates, fat side up. Pour chicken broth into a drip pan and place it under the brisket to catch drippings.
  4. Close the grill lid and cook for 3 4 hours, or until the internal temperature of the brisket reaches 195°F. Baste the brisket with juice from the drip pan every hour.
