Instructions

  1. Preheat your grill to medium high heat, around 350°F (175°C). Soak wood chips in water for at least 30 minutes.
  2. Rub the beef brisket with the barbecue rub, making sure it's evenly coated on all sides.
  3. Place the soaked wood chips directly on the grill's heating element and cook the brisket indirectly until it reaches an internal temperature of 205°F (96°C), about 4 6 hours, maintaining a steady 325 350°F (163 177°C).
  4. While the brisket is cooking, place sliced onions and jalapeños on the grill grates to char them.
  5. Once the brisket has reached the desired internal temperature, remove it from the grill and let it rest for 30 minutes before thinly slicing against the grain.
  6. Toast the buns on the grill and assemble your BBQ feast with sliced brisket, charred onions, jalapeños, coleslaw, and pickles.
