  • 1/2 cup breadcrumbs (gluten

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin

  • 2 tablespoons olive oil For the Citrus Avocado Sauce:
  • 1 ripe avocado
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon freshly squeezed lime juice
  • 2 tablespoons extra
  • virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, mash the chickpeas until mostly smooth. Add breadcrumbs, green onions, garlic, Cajun seasoning blend, smoked paprika, cumin, salt, and pepper. Stir in almond milk until well combined. Form into 12 small fritters. In a large non stick skillet, heat olive oil over medium heat. Fry the fritters for 3 4 minutes on each side or until golden brown and crispy. Transfer to a paper towel lined plate to drain excess oil. For the sauce, blend avocado, lemon juice, lime juice, olive oil, salt, and pepper in a food processor or blender until smooth. Serve fritters with a dollop of sauce on top.
