Ingredients

  • 1 cup firm tofu
  • 2 tbsp nutritional yeast
  • 1/4 cup unsweetened almond milk
  • 1 tsp turmeric
  • 1/2 tsp black salt
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 ripe avocados
  • 1 loaf whole grain bread, sliced
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. a. In a mixing bowl, crumble the tofu and add nutritional yeast, almond milk, turmeric, black salt, salt, and pepper. Mix well and set aside. b. Heat 1 tbsp of olive oil in a non stick pan over medium heat. Add the tofu mixture and cook for about 8 minutes until golden brown. Set aside. c. For avocado toast, slice avocados, toast whole grain bread slices, and top each with a slice of avocado. Drizzle with olive oil and season with salt and pepper. d. In another pan, heat 1 tbsp of olive oil over medium heat. Add chickpeas and cook for about 5 minutes, stirring occasionally. Add maple syrup, salt, and pepper, and cook for another 2 3 minutes until crispy. Set aside.
