Ingredients
1. 2 cups of Irish whole grain soda bread dough 2. 4 oz of vegan Irish cheddar cheese 3. 1 large Irish leek, white and light green parts only 4. 8 oz of creamy mashed potatoes with chive 5. 1 cup of Irish
grown kale, chopped 6. 1 cup of vegan Irish sausage 7. 1 tablespoon of vegan butter 8. Salt and pepper to taste 9. Olive oil for drizzling 10. Fresh parsley for garnish
Instructions
Preheat the oven to 350°F (175°C).
Bake the Irish whole grain soda bread dough according to package instructions, until golden brown and cooked through.
Slice the vegan Irish cheddar cheese into thin slices.
Clean and slice the Irish leek into 1 inch rounds.
Cook the vegan sausage according to package instructions, then chop into bite sized pieces.
In a pan over medium heat, melt the vegan butter and sauté the sliced leeks until softened, about 3 minutes.
Add the chopped kale to the pan with the leeks and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
Assemble the plate: Place a slice of soda bread at the center of the plate. Arrange slices of vegan cheddar cheese around the bread. Pile mashed potatoes and chives on one side, followed by the leek and kale mixture on the other. Add a few pieces of cooked vegan sausage for added flavor and texture.
