Instructions
a. Preheat a griddle or pan over medium heat. Slice the bread into thick pieces and toast until golden brown on both sides. Set aside. b. In the same pan, add olive oil, followed by the red onion slices. Sauté until translucent and slightly caramelized. Season with salt and pepper to taste. c. Add the vegan chouriço slices to the pan and cook for 2 3 minutes on each side or until heated through. d. Arrange two pieces of toast on a plate, layering a slice of tomato between them. Top with a generous portion of sautéed onions and chouriço. e. Garnish with fresh parsley and serve immediately.
