  • 4 Vegan Sausages (Preferably Linwoods Hemp Seed Sausages)
  • 100g Smoked Tofu, sliced into rounds
  • 1 Avocado, sliced
  • 200g Mushrooms, sliced
  • 10 Cherry Tomatoes, halved
  • 1 Large Portobello Mushroom, garnish
  • 4 Slices of Toasted Bread (Rye or Whole Wheat)
  • 2 Handfuls of Fresh Spinach
  • 1 Red Onion, sliced
  • 100g Vegan Cheese, grated (Sheese Original)
  • 1 tbsp Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Preheat a pan over medium heat. Add olive oil and sauté sliced red onion until translucent, then add the mushrooms. Cook for about 5 minutes or until tender. Season with salt and pepper, remove from pan and set aside.
  2. In another pan, cook vegan sausages according to package instructions.
  3. Toast your bread slices and lay them out on a serving plate.
  4. Layer the spinach on top of each slice of toast, then add a round of smoked tofu, followed by cooked mushrooms, and halved cherry tomatoes.
  5. Arrange sausages and avocado slices on the side of your plating. Top it all with a generous amount of grated vegan cheese.
