- firm tofu 1 tbsp olive oil 1 medium onion, diced 2 cloves garlic, minced 1 green bell pepper, chopped 1 cup vegetable broth 1 cup nutritional yeast 1 tsp smoked paprika 1/2 tsp turmeric Salt and black pepper, to taste 4 large flour tortillas 2 cups cooked black beans 1 cup vegan cheese shreds 1 avocado, sliced 1/2 cup cherry tomatoes, halved Salsa, for serving Fresh cilantro, for garnish
Instructions
- Press the tofu to remove excess water and crumble it into a large bowl.
- In a pan, heat olive oil over medium heat. Add onion, garlic, and green bell pepper cook until softened.
- Pour in vegetable broth and bring to a simmer. Add nutritional yeast, smoked paprika, turmeric, salt, and black pepper. Stir well.
- Pour the mixture over the crumbled tofu, stirring until fully combined. Set aside.
- Assemble burritos: Spread 1/2 cup cooked black beans on each tortilla, followed by a layer of tofu scramble. Top with vegan cheese shreds, avocado slices, cherry tomatoes, and salsa.
- Roll up the tortillas and cut in half for serving.
- Garnish with fresh cilantro and enjoy!
